For the crust:
1/2 head cauliflower, cut into florets
1 egg, beaten
1 cup part-skim mozzarella cheese
1 teaspoon fresh basil, chopped
2 teaspoons oregano
Salt and pepper
Topping:
1 large boneless, skinless chicken breast, cooked & shredded
(I used left over from my crock pot shredded buffalo chicken)
1/3 cup Franks red hot sauce
1/2 large orange bell pepper, sliced
3 ounces fresh mozzarella
Ground pepper
Directions:
Preheat oven to 400 degrees F. To make the crust, place the
cauliflower florets into a food processor or blender. Pulse on low until the
mixture looks like rice.
Place cauliflower rice into a skillet and cook for about 6-8
minutes. Remove from heat and place in a mixing bowl. Add egg, cheese, oregano,
basil and salt and pepper.
Cover a pizza pan with parchment paper and smooth crust over the
parchment paper to about a 1/4 inch thickness.
Bake crust for about 15-20 minutes, or until crisp and golden
brown. Remove from heat.
Mix chicken and pepper with the Buffalo sauce. Mix well. Place
chicken and pepper on the crust. Add small pieces of mozzarella around the
pizza and sprinkle with pepper.
Bake for about 5-6 minutes, or until cheese is melted.
Let cool
slightly and eat up!
Basil Turkey Meatballs
Yields: about 16 evenly sized balls

Dijon (or any other type) of mustard
- 2tsp
black pepper
- 1tsp
salt
- 2tsp
garlic powder
- 1T
dried oregano
- 2T
nutritional yeast (adds a cheesy, light flavor!)
Directions:
- Combine
turkey and all of the spices and mustard in a big bowl.
- Mix
well with your hands (this is the best way to make sure all of the spices
combine evenly!)
- Form
into 16 even sized balls (about 3/4 inch-1 inch) and place on a
pre-sprayed cookie sheet
- Bake
in the oven for about 20 minutes or until cooked through)
Protein Energizer Bunny Balls
Yields: 20 energizer balls!
Ingredients:
- 1/2
C vanilla whey protein powder (or other flavor)
- 1/2
C all natural nut butter (I used almond
- 1/2
C honey or agave
- 3/4
C oatmeal
- 1/3
C dried cranberries or raisins or dark chocolate chips!
Directions:
- Mix
all ingredients and form into 20 evenly sized balls. Freeze and enjoy!!
