Great day of horseback riding and teaching yesterday.  The air was cold but the sun was beautiful.
 Coming home to more grilled chicken after a long day in the cold can be a real bummer.  Sometimes I think I eat so much chicken I'm going to turn into a chicken   Here's a yummy recipe to change up the typical grilled chicken and give it a warm summer feel...
Enjoy

Add fresh fruit.
Sprinkle one 6-ounce skinless, boneless chicken breast with a pinch each of kosher salt and black pepper. Place in a baking pan and top with 1 sliced fresh peach. Bake in a 375-degree oven for 30 minutes or until internal temperature reaches 165 degrees.
Nutrition facts: 255 calories, 37g protein, 15g carbohydrate, 5g fat (1g saturated), 2g fiber

** Trader Joe's has jarred peaches that are perfect for this.

Happy Friday.  I have been busy busy working on my Equestrian Athlete Nutrition Seminars but no worries I have not forgotten Super Bowl Parties to prepare for next weekend!  Here are some healthy options to some yummy favorites.  Have a super weekend everyone!

Corn Avocado Black Bean Salsa Dip
Makes one very large bowl — about 24 to 28 1/2 c. servings depending on veggie sizes.

Ingredients:
• 4 tomatoes (make sure they are a bit firm)
• 1/3 c. chopped cilantro
• 2 red peppers, chopped
• 1/2 medium-sized purple onion, chopped
• 2 avocados, chopped
• 1 - 15 oz. can of corn, drained
• 1 - 15 oz. can of black beans, drained
• 1/4 c. extra virgin olive oil
• 4 T. hot sauce of choice
• 1/2 c. lemon juice
• 3 tsp. Truvia (I like Baking Truvia) or 1/4 c. sugar

Directions:
Chop all veggies and combine all ingredients into a large bowl. Mix well,and serve immediately. Or for best flavor, cover and let sit 2-3 hours in the refrigerator.

Use baked tortillas, veggies or endive leaves to dip into salsa, and enjoy.

Tips and Suggestions:
This salad is perfect to keep on hand to add to salads, eggs, wraps and more!

Seven-Layer Mexi Dip
Makes about 8-10 1/2 c. servings.


Ingredients:
• 1 - 8 oz. container of fat-free cream cheese
(you can leave this out completely if you want to save calories!)
• 1 - 16 oz. can fat-free refried beans
• 1 c. fat-free Greek yogurt (I use Fage 0%)
• 1/2 packet taco seasoning of choice
• 1 medium-sized firm tomato
• 2 green onions, chopped
• 3/4 c. cauliflower, grated into crumbles like cheese
• 1 soft avocado
• dash salt

Directions:
On a medium plate, spread cream cheese over the entire bottom (you can leave out the cream cheese if desired). Next, spread the entire can of refried beans over the cream cheese, but leave some of the cream cheese showing so you can see the layers. In a separate bowl, take taco seasoning and mix it into the fat-free yogurt until smooth. Now you can take the taco yogurt mixture and spread over the bean layer. Chop green onions, avocado and tomato, and sprinkle on top. Finally, using a cheese grater, grate your cauliflower, and sprinkle on top like cheese. Sprinkle salt over the top if desired.

Other ideas:
If you want a more mild flavor, instead of using Greek yogurt, try taking 1 c. of 1% cottage cheese and blend the taco seasoning in a blender until smooth. Or instead of using cream cheese on the bottom layer, try using 1 c. cottage cheese (blended).

Tips:
Try serving with carrots, celery, endive or baked chips! I tried organic pita and toasted in a frying pan until crunchy.

I am so excited for my new venture!  Most of you know I have 2 passions.  Health/ Fitness and Horses!
I have been riding since I was 4 years old.  I rode NCAA in college and have competed successfully all over the country.
I am starting an Equestrian Athlete Nutrition and Exercise program! I want to help people improve their riding performance by improving their health, wellness and fitness.  I have put together workouts and nutrition geared towards all types of Equestrian Athletes.  My program will be offered both online and in person. We will offer

Our nutrition component will incorporate the amazing Isagenix nutritional line.

Hey there,
A friend asked for a Buffalo Chicken reciper today so I figured I would share with all of you.  Super easy and yummy!  Also spicy food REVS your metabolism!


It is so simple…put the following ingredients in crock pot and cook for 6 hours! Shred the chicken with a fork and stir…YUM!!!

5-6 chicken breasts
2 cups franks red hot sauce (more if chicken is not covered)
1/4 cup low fat ranch dressing

Clean eating is so important to my lifestyle.  I am always on the go! For example this weekend consisted of the gym both Saturday and Sunday, a meeting with my Isagenix consultants, tons of riding lessons and snowboard lessons with my kids.
Sunday was a day of food prep for the week and food prep for the big game.  Monday starts with 530am Boot Camp then we are off and running for the week.
I eat 6 meals a day consisting of protein, veggies, starches and fruits.  If I miss a meal or vary from my clean eating routine I pay for it.  I get run down, I feel weaker at the gym and my stress level goes UP.
Of course I have cheat days and cheat meals.  I always regret it later.  It takes me a few days to get feeling as amazing as I do when I consistently eat clean.
In the next few posts I will highlight some of my favorite recipes.  If there are any favorites you would like healthier versions of shoot me a note I would be glad to share any recipes I have with you!

Food is prepped for the week and I am going to rock it!  Buffalo chicken, Mahi Mahi, and I have Chicken and sweet potato stew in the Crock Pot right now for the SNOW STORM!
This recipe is super easy, healthy and delicious....
Here ya go hope you enjoy

INGREDIENTS
6 boneless chicken breasts
2 pounds sweet potatoes, peeled and cut into spears
1/2 pound white button mushrooms, thinly sliced
6 large shallots, peeled and halved
4 cloves garlic, peeled
1 cup dry white wine
2 teaspoons chopped fresh rosemary, or 1/2 teaspoon dried rosemary, crushed
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1 1/2 tablespoons white-wine vinegar
PREPARATION
Place chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a crock pot, stir to combine. Put the lid on and cook on low until the potatoes are tender, about 5 hours….before serving stir in vinegar.

Hope everyone is having a fabulous weekend!  Sunday breakfast is one of my favorite meals of the week.  I love cooking a big breakfast and sitting down to enjoy every last bite.  I used to enjoy stuffing my face at Sunday brunch but these days I would rather stick to my clean eating habits.  Here is the recipe for tomorrow morning.  Who else is cooking?

Spinach & Bacon Omelet

Ingredients:
  • 1 egg plus 2 egg whites
  • 2 slices cooked turkey bacon, crumbled
  • 1 cup baby spinach
  • Cooking spray
  • 1 slice whole-grain toast
  • 1 teaspoon butter

Make it:Whisk together eggs, bacon and spinach. Coat a skillet with cooking spray; cook egg mixture and serve with toast and butter.

Funny story.... For those of you that don't know me my most important job is being a mom.  I have a very energetic 6 year old little girl named Kaelyn.
 I picked her up from school the other day and when she got in the car she started crying.  I asked her what was wrong?  Did something happen at school?  (she had real tears and all) She said YES!  She is the ONLY one who has to eat HEALTHY food all the other kids get to eat junk and she doesn't!   It's NOT FAIR!  (Kaleyn is very dramatic)
I of course start to laugh which infuriated her!   I can only hope that some day she thanks me for being such a mean mom and depriving her from all this junk she is missing!
I know that I am being the best role model I can be for my daughter.  This is a huge part of what motivates me to get to the gym everyday and eat right!  She doesn't realize it now but my lifestyle is going to set her up for a lifetime of health and wellness.
I was watching The Biggest Loser the other night.  Does anyone else watch this show?  I will admit I am not an avid follower but I do like the workouts.... Anywho this edition is focusing on childhood obesity.  The facts are mind blowing!
68% of children 2 to 19 years of age are OBESE!
My daughters generation is the FIRST generation to have a SHORTER life expectancy then thier parents!  We are literally killing our kids!
Us as moms live with enormous amounts of guilt especially over doing ANYTHING for ourselves.  So don't workout and get healthy for you!  Do it for your kids!

Happy Tuesday!  Started my day out with a kick butt boot camp class.  Who else was at the gym today?
 For those of you just getting to know me I am a fitness, health and wellness fanatic.  I have just started Bikini and Figure competitions and I am looking to share my experience with you!
I love to help people get healthy and feel better.  My hope is this blog becomes very interactive and you share your questions and thoughts with me.

I made a decision about 18 months ago that I no longer wanted to be tired all the time.  I wanted to feel better and I wanted to be a role model for my 6 year old daughter.  I am posting my before and after pictures to show you my journey (pictures worth a 1000 words... right?)
My goal now is to successfully compete in the Figure division.  Hoping you will join me in my journey and I can help you with yours!
